Carrot Salad

  1. Grate the carrots and put them aside in a bowl with lemon juice, sugar and salt added to taste.
  2. Take a small pan and heat cooking oil in it. Add a few mustard seeds and cumin seeds and few pieces of chopped green chillies depending on spice level you desire to this hot oil till they crackle. Add a tiny pinch of turmeric to the oil.
  3. Add the hot oil on top of grated carrots and mix it together.
  4. Set it aside for 15 to 30 minutes. Add chopped fresh coriander leaves to garnish and serve.
