- Grate the carrots and put them aside in a bowl with lemon juice, sugar and salt added to taste.
- Take a small pan and heat cooking oil in it. Add a few mustard seeds and cumin seeds and few pieces of chopped green chillies depending on spice level you desire to this hot oil till they crackle. Add a tiny pinch of turmeric to the oil.
- Add the hot oil on top of grated carrots and mix it together.
- Set it aside for 15 to 30 minutes. Add chopped fresh coriander leaves to garnish and serve.
